For the past few days, I’ve spent some time at my parents grilling, and I’ve forgotten how much I love that grill.
Sunday night, after the soccer game, I had a few friends over for ribfest:
Two racks of baby back ribs, seasoned in a dry rub overnight and then slow-roasted for a few hours on the grill, then glazed with some hot and spicy barbecue sauce, paired with garlic mashed redskin potatoes, garlic-scented tomato salad, bread with herb butter, and fresh brownies with ice cream for dessert. Beer pairing: Sam Adams Boston Lager.
If you’re looking closely at that picture and thinking that the ribs look a little…blackened, it’s because they are. They actually caught fire a few times on the grill, but the blackened layer wasn’t nearly as deep as I originally feared. Beneath a seared crust of flavor lies quite a bit of moist, tender rib meat. It was delicious.
Yesterday for lunch I went back over and grilled up some jalapeno cheddar beer brats.
These came from the butcher in Grand Rapids that I love, and after eating brats like this it’s nearly impossible to go back to Johnsonville. Best served with a little hot and spicy pig sweat.
That will probably be all the grilling I do for now; today and tomorrow I embark on a massive Christmas cookie-baking adventure with my mom. Peanut brittle, fudge, spritz, peppermint pinwheels…it’s going to be a long list.
