Last Christmas, I got 4 new cookbooks, plus a fifth on how to make 750 cocktails (I sense a 40 Cocktail Challenge on the horizon). This recipe, along with a few others that I’ve explored in recent months, comes from Cook This, Not That (available on Amazon for a ridiculously affordable price).
The thing that I’ve learned after making quiche a few times with this recipe is that the first two steps are about where the recipe ends and where you can begin with the wild and crazy experimentation. I’ll outline some of the variants at the end of the recipe:
What you’ll need
1 pie crust, thawed
3 eggs
1 cup milk
Add-ins (see below)
Begin by pre-baking the pie crust. My quiche expert of a friend explained that this step, while not specified in the cookbook, keeps the crust dry and flaky instead of soggy.
While the pie crust is cooling, combine your eggs and milk in a bowl (anything bigger than about 4 cups should be plenty big).
For the intents and purposes of this recipe, we’re also adding a half can of artichoke hearts, roughly chopped:
A couple of leaves of basil, roughly chopped:
And about half a block of crumbled feta cheese and some sundried tomatoes, julienned and packed in oil:
It usually doesn’t hurt to throw in a little salt and pepper while mixing it all together in your bowl:
By all means, do not limit yourself to just a few ingredients. You do want this to all fit in the pie crust, but there’s probably room in there for a little sausage or another kind of cheese or vegetable.
Bake in a 350 degree oven for about 45 minutes, until your quiche is good and set (the fork test works well here).
Allow to cool briefly, and then slice. Serves six. I’ve found the quiche reheats fairly well in the oven and microwave (the oven won’t turn the crust soggy, if you can be patient enough).

– Fresh cooked spinach
– Shallots sauteed in olive oil
– Cooked chicken sausage, chopped
– Asparagus, chopped
